NEGRONI MENU

The most famous Italian cocktail probably originated in the USA. Its bittersweet flavor profile makes it very approachable. The classic recipe is one part each of gin, Campari, and sweet vermouth. This menu represents the many different versions of the drink that have been popular for over 100 years.

Americano Cocktail - The Americano, which has existed under other names in history, was probably the precursor to the modern Negroni. It lacks gin and in its place uses soda water for a more refreshing high-ball version of the drink. Carpano Antica Vermouth. Campari. Soda Water.  14

House Negroni - Our house version of the classic Negroni uses barrel-aged gin and a touch of Ramazotti Amaro for added depth and complexity. Barrel-Aged Big Gin. Campari. Foro Sweet Vermouth. Ramazotti. 15

Negroni Sbagliato - Meaning “mistaken Negroni,” this trendy version of the cocktail replaces gin with sparkling wine for an aperitivo version of the original. Punt e Mes. Highside Amaro Rosina. Cava.  14

White Negroni - The classic blend of gin, vermouth, and bitter liqueur is represented with completely different ingredients. The White Negroni maintains a bittersweet flavor but expresses it much differently than the classic version. Gray Whale Gin. Cascadia Bitter. Lustau Bianco Vermouth. Scrappy’s Black Lemon Bitters.  16

Negroni Senza - AKA Negroni “without.” This is a nonalcoholic interpretation of the classic. Bittersweet and complex with spicy notes. Dhos NA Gin. Dr. Zero Zero NA Amaro. Saskatoon NA. Dhos NA Aperitivo. Wilderton NA Aperitivo. All The Bitter New Orleans NA Bitters.  15

Grappa

Grappa is an Italian style of brandy distilled from the “vinaccia” or left over solids from the wine making process. It’s aromas range from floral and herbaceous to grassy and tropical to earthy, woody, and musty. The flavor is fruity, bright and delicate when young; complex yet well-rounded when aged.

Grappa Bianca

Grappas that are produced from a multi-varietal vinaccia and aged six months to a year in stainless steel or glass.

Tosolini Cividina - Our house choice for grappa is made up of a blend of grapes typical to the Fruili region of NE Italy. Clean and fruity with notes of blanched almonds and pepper. 11

Marolo Dedicata al Padre - Made from multiple varietals known to grow in the Roero area of Piedmont. Full bodied and robust. Hints of juniper, plum, apple, and pepper. 12

Nardini Bianca - The OG grappa, started in 1779 at Italy’s oldest distillery, Nardini Bianca is the most popular grappa in Italy. Distilled from multiple grape varietals; it carries intense aromas and flavor. 12

Jacopo Poli Sarpa di Poli - From Bassano Italy, this blend of Merlot and Cabernet presents a pleasant floral expression of juniper, berries, and ripe grapes. 13

Luxardo - Smooth with hints of citrus, lavender, and stone fruit. Made directly west of Fruili in the Veneto region of Italy. Grapes used are Cab Sauvignon, Cab Franc, and Merlot. 13

Alexander Bianca - From Veneto, Alexander uses a variety of both red and white grapes. Triple distilled for a delicate softer expression. 15

l’Arco Grappa di Amarone - Distilled from dried Corvina, Cab Sauv, and Rondinella grapes for bright and intense aromas, then bottle rested. Color is clear with a nose of wet straw, toasted hazelnut, and vanilla. 19

Antinori Grappa di Tignanello - Legendary wine producer Antinori uses estate grown Cabernet and Sangiovese from their Tignanello vineyard. Rich and inviting floral notes finish dry on palate. Excellent after dinner with a strong coffee or espresso. 30

Jacopo Poli Torcolato - This premium Grappa is distilled from Vespaiolo and Friulano grapes of the Breganze Hills in Veneto. Left to dry out, the grapes distill into a Grappa of concentrated fruit flavor that explodes on the palate with dates, raisin, apricot, honey, and lavender notes. 35

Monovitigno Bianca

Grappas produced from single varietal vinaccia and aged six months to a year in stainless steel or glass.

Poli Po’ di Poli Morbida/Smooth - Craft distilled from orange Moscato in small pot stills. This young Grappa is floral with bright fresh citrus and tropical tones. 14

Poli Po’ di Poli Secca/Dry - Craft distilled from Merlot in small pot stills. This young Grappa is floral and fruity but finishes dry with a pleasant warmth. 14

Castello di Banfi - From one of the most respected wine producers in Tuscany. Made from Brunello di Montalcino, this grappa is more delicate than most and finishes clean and dry. 16

Moletto Grappa di Prosecco - Single-vine grappa rigorously produced with traditional copper stills. Subtle apple and pear flavors and intertwined with gentle floral notes. Delicate and round on the palate. 16

Moletto Grappa di Barbera - Single-vine grappa rigorously produced with traditional copper stills. The warm scents of red fruit and spices emerge in the taste of this intense, full-bodied grappa that is crystal clear in color, lingering and harmonious on the palate. 16

Marolo Grappa di Brunello - Nose is delicate, fresh and floral. Flavors are soft and elegant. Distilled from 100% Sangiovese from Brunello di Montalcino. 18

Marolo Grappa di Moscato - Rested in stainless steel to allow the floral/herbaceous notes to take over. Jasmine, orange blossom, and sage notes are intense but smooth. 18

Marolo Grappa di Gewürztraminer - Rested in stainless steel; the flavors and aromas are dominated by intense floral tones, with notes of pear, black currant, and subtle spice. 21

Clear Creek Sangiovese - From highly touted Oregon Producer Clear Creek Distilling. Leaning on spice and earthiness, while displaying enough herbal and medicinal notes to draw subtle comparisons to Islay Scotch or Mezcal. 21

Nonino Grappa di Moscato - The Nonino family has been distilling since 1897, and is more well known in Italy for their Grappa than their Amaro. This very aromatic and expressive Grappa is first fermented from fresh Moscato grapes, then distilled and rested for 6-12 months in stainless steel. 22

Nonino Grappa di Merlot - The use of small pot stills and no time wasted between pressing the grapes and distillation results in a cleaner rounder expression. Notes of fruit jam and rose petals. 24

Nonino Cru Monovitigno Picolit - Distilled from the vinaccia of indigenous “cru level” Picolit grapes. This was the first monovitigno Grappa ever produced back in 1973. 30

Jacopo Poli Vespaiolo - This top tier Grappa is distilled from the cherished Vespaiolo grape of the Breganze Hills in Veneto. Elegant and complex aromatics lead to a rich and sustained finish. 35

Gaja Gaia and Rey - Gaja, known as one of the finest wine producers in the world, uses the vinaccia from their Chardonnay for this crafted Grappa bianca. Aroma of ripe white fruits, flowers, and forest herbs lead to a long finish. 36

Aged Grappa

Grappa rested up to 18 months in oak barrels.

Sibona Grappa di Barbera - Long aging in stainless steel tanks and finished in oak barrels for a light straw color. Aroma is intense and the palate is dry, robust, and harmonious. 12

Sibona Grappa di Barolo - Long aging in stainless steel tanks and finished in oak barrels for a light straw color. Aroma is intense and spicy. The palate is mature and velvety with deep woodsy notes for a long aftertaste. 17

Moletto Grappa di Barolo - Single-vine grappa rigorously produced with traditional copper stills. Light straw color, it has a characteristically rich nose. With a harmonious and well-structured taste, it offers rich floral, fruity and spicy hints, with a delicately tannic sensation. 17

Poli Cleopatra Moscato Oro - Produced in the cellar of the Poli distillery using a rare vacuum bain-marie distilling method. This means the vinaccia is cooked slower at a lower temperature to reduce impurities and enhance terpenes. Elegant array of tropical fruit notes, with honey, caramel, and spring flowers. 21

Nonino Grappa di Chardonnay - Production of this Grappa is limited to the amount of quality grapes from each year's harvest. Vinaccia is brought to distillation immediately after the juice is pressed and spends 12 months aging in barriques. Notes of chocolate and almond are juxtaposed with forest tones. 23

Grappa Riserva

Grappa rested upwards of 18 months in oak barrels.

Nardini Riserva 3 Year - Aged for at least 3 years in Slovenian oak. Woodsy notes of caramel, spice, and chocolate help intensify flavors and add complexity. 14

Marolo Grappa di Barolo - Robust and full flavored. A minimum of four years aging in small oak barrels brings lots of toasty vanilla, and nutty/spicy notes without burying the floral essence of the grape. 20

Marolo Grappa di Amarone - Choice Amarone from small producers is distilled and aged 3 years in barriques. Dried fruit and cherry flavors meet toasty nuttiness and subtle balsamic notes. Complex with a long finish. 22

Nardini Riserva 7 Year - Aged for at least 7 years in Slovenian oak. Select vinaccia adds to its aroma and fruit notes while extra aging brings forth sustained woodsy flavors of vanilla, and spice. 25

Altesino Grappa di Brunello Riserva - Distilled from 100% Brunello grade Sangiovese within 24 hours after fermentation. Spending a minimum of three years in small french oak barrels creates an overall round and refined experience. 28

Marolo Dopo di Moscato 5 Year - Characteristically floral with citrus and tropical notes. Nutty vanilla flavors brought on by five years aging in casks previously used for Moscato di Pantelleria in Sicily. 28

Il Poggione Brunello Riserva - Choice Sangiovese from Montalcino. Apple, pear, and apricot notes are complemented by licorice, vanilla, and spice flavors from four years in french oak. An excellent after dinner Grappa. 30

Marolo Grappa di Barolo 12 Year - Aged for 12 years in little oak and acacia barrels. Wonderfully complex; dried and candied fruit flavors with plush and polished barrel notes. 34

Jacopo Poli Grappa di Sassicaia - This polished collaboration with renowned wine producer Tenuta San Guido, uses vinaccia from their super Tuscan blend known as Sassicaia. Four years in oak barrels brings about a pronounced toasted nuttiness, spice, and vanilla. Chocolate and coffee notes come from an extra 6 months of aging in used Sassicaia casks. 50

Not Grappa

Spirits made in a similar style to or from known producers of Grappa.

Caffo Limoncino - An all natural infusion of Calabrian lemon zest and sugar. Similar to limoncello but with Grappa as the base spirit. 11

Nardini Acqua di Cedro - 95% of what Nardini produces is Grappa but they do make a few other spirits like Acqua di Cedro. This bright, sweet, citrusy liqueur is flavored with cedro, also known as citron, a sweet cousin of lemon. 11

Ouzo No. 12 - They say every bottle of this famous grape based anise flavored liqueur carries the soul of Greece within it. 11

Singani 63 - Alexandria Muscat grapes originally cultivated in Egypt, are the secret to the aromatic and floral expression of this Bolivian spirit. Fans of another South American spirit, Pisco, will recognize its similarities 11

Tekirdag Rakisi Gold - Raki is a Turkish spirit made much in the same style as Ouzo, grape based and flavored with anise. This raki differs in that it’s been barrel aged for added depth and complexity. 13

Amaro Nonino Quintessentia - The family of Amaro is broad and has quite a range of flavors, but they are consistently bitter/sweet; usually leaning one way or the other. This Amaro is rare in that it uses Grappa as its base before adding a variety of alpine herbs and spices. The flavor is wildly complex and more sweet than bitter. 16

Marolo “Milla” Chamomile Grappa - Using Barolo Grappa as the base, this sweet and delicious liqueur is infused for a full 11 months with ripe chamomile flowers. 18

Poli Uva Viva Italiana - Whole grape distillation of Malvasia Bianco and Moscato Bianco. Stainless steel fermentation ensures a rich and vibrant brandy. Abound with floral and herbaceous notes that are characteristic of the grapes. 18

Jacopo Poli Arzente - The high acid wine made from a grape called Trebbiano di Soave is ideal for distilling fine aromatic brandy. Ten years spent in Slovenian oak adds ample depth with lots of vanilla, brown butter, tobacco, and chocolate notes. 35
