Jean-Yves Devevey “Champs Perdix” is a white Burgundy poured at Grappa in Seattle’s Queen Anne neighborhood. It is a Chardonnay from the Bourgogne Hautes-Côtes de Beaune, made by Jean-Yves Devevey from an organically farmed parcel above the famed slopes of the Côte de Beaune. We keep it on our list because it offers the precision and minerality of fine white Burgundy with genuine character and value.
About the Winery
Jean-Yves Devevey farms about eight hectares spread across the Côte de Beaune, Hautes-Côtes de Beaune, and the Côte Chalonnaise. The domaine was certified organic in 2014, and Devevey has experimented with biodynamic practices. His whites see long, gentle aging in barrel on fine lees, with minimal intervention in the cellar.
