White Negroni
White Negroni

The White Negroni is a bittersweet, pale twist on the classic, poured at Grappa in Seattle’s Queen Anne neighborhood. It keeps the Negroni’s signature gin-and-bitters structure but trades the red Campari for clear, herbaceous ingredients, resulting in a lighter, more aromatic aperitivo. It is mixed in-house and is a favorite for guests who love a Negroni but want something a little brighter.

What’s In It

Our White Negroni is built on Big Gin, a juniper-forward Seattle gin, with Cascadia Bitter standing in for the usual red bitter liqueur. Dolin Blanc, a pale, lightly sweet French vermouth, rounds out the base, and a few dashes of Scrappy’s Black Lemon bitters add a savory citrus accent. It is stirred over ice and served on the rocks, keeping the classic Negroni build in a pale, modern form.

About This Cocktail

The White Negroni is a modern riff on the Italian classic, traditionally made with gin, a clear bitter aperitif, and blanc vermouth instead of the usual red Campari and sweet vermouth. At Grappa we use local and craft ingredients to give ours a Pacific Northwest accent while honoring the original’s balance of bitter and sweet. It is a refined, lighter way to open a meal, from our family to your table.

Tasting Notes

The aroma is bright and floral, with juniper, citrus peel, and gentle herbs. The palate is bittersweet but lighter and crisper than a classic Negroni, with the blanc vermouth lending soft sweetness and the bitters adding a clean, dry edge. The finish is aromatic and refreshing. It is bitter, but in a delicate, pale way.

What to Pair It With

Its bright, herbal profile suits lighter plates. Pair it with the Heirloom Tomatoes & Burrata, Our Hummus, or the briny Spaniard Octopus. Browse the full dine-in menu for more.
