Marolo Grappa di Brunello is a single-grape (monovitigno) grappa distilled from the pomace of Sangiovese grapes grown for Brunello di Montalcino, and we are delighted to pour it as a digestif at Grappa in Seattle’s Queen Anne neighborhood. Made by Distilleria Marolo of Alba in Piedmont, it carries the quiet, perfumed elegance we love to share from our family to your table at the close of a candlelit meal.

About the Distillery

Distilleria Marolo was founded in 1977 by Paolo Marolo in the family home in Mussotto d’Alba, beneath a fresco of Saint Teresa that gave the distillery its name, Santa Teresa. A teacher of distillation himself, Paolo set out to restore grappa to its artisanal roots, reintroducing the slower, traditional steam-cauldron method in an era dominated by industrial stills. Today the family tradition continues with his son Lorenzo, who joined the distillery in 2014.

Style & Production

This is a monovitigno grappa, meaning it is distilled from a single grape variety rather than a blend. Grappa is made by distilling the vinaccia, the skins, seeds and stems left after grapes are pressed for wine. Here the pomace comes from Sangiovese, the noble grape behind Brunello di Montalcino in Tuscany. The spirit is distilled gently to preserve the grape’s character and rested without oak, keeping it crystal clear.

The aroma is fresh and floral, with delicate notes of dried rose petals, violet and bright red fruit. On the palate it is soft and elegant, with hints of orange blossom, honeysuckle, ripe orchard fruit and a touch of fine minerality. The finish is clean and aromatic, gently warming, with a whisper of white pepper that lingers.
