Sibona Grappa di Barolo is an aged grappa poured at Grappa in Seattle’s Queen Anne neighborhood, crafted by the Antica Distilleria Sibona of Piobesi d’Alba in Piedmont. We list it because it captures the noble character of Barolo in a glass, a velvety, wood-rested digestif we are proud to share from our family to your table.
About the Distillery
Antica Distilleria Sibona sits in the Roero hills near Alba, in the heart of Piedmont. It is one of Italy’s most storied grappa houses, long regarded as an artisan distillery where single-varietal grappas are made with great dedication and craftsmanship. Generations of master distillers and oenologists have shaped its reputation for elegance and balance.
Style & Production
This grappa is distilled from the pomace of Nebbiolo grapes used to make Barolo, picked fresh during harvest and carefully selected. Distillation takes place in-house in copper stills. The spirit then rests, with maturation in oak barrels that lends it depth and a gentle amber tone before bottling.
Tasting Notes
Expect a pale amber color and an intense, smoothly spiced bouquet. On the palate it is mature, deep and velvety, with excellent balance and harmonious woody notes drawn from its time in oak. The finish is long and warming, a refined close to a candlelit evening.
What to Pair It With
Sibona Grappa di Barolo is a natural companion to Mama’s Tiramisu and our Flourless Chocolate Cake, and it shines as a digestif after our American Wagyu Steaks. Explore the full dine-in menu for more pairings.
How It’s Served at Grappa
