About the Distillery
Distilleria Marolo was founded in 1977 in Alba, in the heart of Piedmont, by Paolo Marolo, who began distilling grape pomace from the Langa and Roero out of passion as much as craft. The house follows two simple rules: source superior single-varietal pomace, and press it as soon as possible. Its copper bain-marie stills run around the clock through harvest to preserve freshness, and that devotion is exactly what we love to bring to the table in Seattle.
Style & Production
This grappa is distilled from the pomace of Nebbiolo grapes used to make Barolo, gently coaxed through Marolo’s traditional discontinuous stills. The spirit is then matured in wood, where it draws a lovely straw color, a deep, ample aroma, and a velvety smoothness. That patient barrel aging is the heart of its character, balancing full flavor with refined polish.
