Woodinville Straight Bourbon Aged 8 Years
Woodinville Straight Bourbon Aged 8 Years

Woodinville Straight Bourbon Aged 8 Years is a celebrated Washington bourbon poured at Grappa in Queen Anne, Seattle — a hometown pride pour with serious depth.

About the Distillery

Woodinville Whiskey Co. was founded in 2010 in Woodinville, Washington, just outside Seattle, and has become one of the Pacific Northwest’s most respected distilleries. Its grain is grown by a single family farm in Central Washington, and the spirit is aged in the region’s dramatic temperature swings, which accelerate the whiskey’s interaction with the oak.

Style & Mash Bill

This is a limited-release Washington straight bourbon aged eight years, built on a distinctive, higher-rye mash bill — notably higher in rye than the distillery’s flagship bourbon. It is aged in heavily toasted, lightly charred barrels made from staves seasoned outdoors for two years, and each bottle of this small release is individually numbered.

Tasting Notes

Deep and layered from its long maturation: caramel, vanilla, and toffee meet rich toasted oak, dark baking spice, and the higher-rye recipe’s peppery lift. The extra years lend a rounded, full-bodied texture and a warm, lingering finish.

What to Pair It With

Its oak and spice are made for our American Wagyu Steaks, while the rye backbone cuts through our Sicilian Meatballs. To close, pair it with our Flourless Chocolate Cake. See the full dine-in menu for more.

How It’s Served at Grappa

Poured neat or on the rocks at $31. We suggest neat to honor its eight years in the barrel, with ice on request.
