Courvoisier VSOP is an elegant Cognac from the heart of the Cognac region in southwestern France, a grape brandy prized for its balance and finesse. We pour it at Grappa, our Mediterranean restaurant in Queen Anne, Seattle, as a refined way to linger at the end of dinner.
About the Producer
The House of Courvoisier has been based in Jarnac, in the heart of the Cognac region, since the nineteenth century. Long associated with French elegance, the house is known for the care it takes in selecting eaux-de-vie from the region’s most prized crus and blending them into Cognacs of consistent refinement, of which the VSOP is a celebrated example.
Style & Production
This is a grape brandy distilled chiefly from Ugni Blanc wine in the Cognac appellation, drawing on eaux-de-vie from crus including Grande Champagne, Petite Champagne, and Fins Bois. It carries the official VSOP, or Very Superior Old Pale, designation and is matured in French oak from the forests near Cognac, which lends the spirit its depth, colour, and gentle spice.
Tasting Notes
Deep amber in the glass, with aromas of jasmine, peach, and toasted almond. The palate is smooth and layered, offering vanilla, caramelised fruit, soft honey, and a thread of oak spice, finishing medium-long with a warming, nutty close.
What to Pair It With
Its honeyed, nutty depth is lovely with our Flourless Chocolate Cake or a slice of Mama’s Tiramisu. The soft caramel notes also flatter our Vanilla Bean Panna Cotta from the dine-in menu.
How It’s Served at Grappa
We serve it neat as a digestif, in a snifter to gather its aromas, for $16.
