R. Jelínek Fernet

R. Jelínek Fernet is a Czech fernet — a bitter, herb-driven digestif in the fernet style — and it is poured at Grappa in Seattle’s Queen Anne neighborhood. It is made by R. Jelínek, the celebrated distillery in Vizovice in Moravia, far better known for its fruit brandies. We list it because it offers a striking Central European turn on the bitter after-dinner tradition: dry, deeply herbal and bracing, the kind of pour that resets the palate at the end of an evening.

About the Producer

R. Jelínek is one of the Czech Republic’s most storied distilleries, with roots in Vizovice reaching back to the late nineteenth century and a heritage of fruit distillation that long defines the region. The house is internationally known for its slivovitz and other fruit brandies, including a respected kosher line. Its fernet draws on that same distilling expertise, applying generations of know-how to a bitter herbal liqueur in the Central European digestif tradition.

Style & Production

Like other fernets, this is a bitter herbal liqueur built on a macerated blend of herbs, roots and spices — a recipe that the house keeps to itself but that leans on botanicals such as gentian, chamomile and galangal. The herbs are infused and blended to produce a dry, intensely aromatic digestif with a pronounced anise and herbal character. It belongs squarely to the fernet family: low in sweetness, high in bitterness, and meant for the close of a meal.

Tasting Notes

The aroma is bracingly herbal, with menthol, anise and a backbone of bitter roots. The palate is dry and assertive — gentian bitterness, cooling mint and a wave of medicinal herbs — with only a restrained sweetness to round the edges. The finish is long, clean and bitter, leaving the palate refreshed.

What to Pair It With

A classic digestif, it cuts beautifully through a rich finish to the meal. Pour it after Mama’s Tiramisu, alongside an espresso with Vanilla Bean Panna Cotta, or with a final round of the Charcuterie Board. See the full dine-in menu for more.

How It’s Served at Grappa

R. Jelínek Fernet is poured at $12, served neat or over ice as an after-dinner digestif.
