Bombay Sapphire Gin
Bombay Sapphire Gin

Bombay Sapphire is a bright, aromatic London Dry gin instantly recognizable in its cobalt-blue bottle, and it is poured by the glass at Grappa in Queen Anne, Seattle. Smooth and balanced, it is a versatile, crowd-pleasing classic.

About the Distillery

Bombay Sapphire is made in England, where it is distilled using a distinctive vapor-infusion method. Rather than steeping the botanicals directly in the spirit, the distillate is passed as vapor through a basket of botanicals, gently drawing out their aromatics for a lighter, more fragrant character. Today it is produced at a striking glasshouse distillery in Hampshire, where botanicals are showcased as much as the spirit itself.

Botanicals & Style

Bombay Sapphire is a smooth, contemporary-leaning London Dry built on ten botanicals. Juniper remains present and true to style, but it is woven into a notably aromatic blend that includes coriander, lemon peel, angelica, orris root, almond, licorice, cassia, cubeb berries and grains of paradise. The vapor-infusion process gives it a lighter, more floral and citrus-bright expression, making it approachable and exceptionally mixable.

Tasting Notes

Expect a fresh, fragrant nose of citrus and soft juniper, leading to a smooth palate of lemon zest, gentle coriander spice and a delicate peppery warmth from the cubeb and grains of paradise. The juniper is clean and balanced rather than aggressive. The finish is crisp, bright and refreshing. It is an effortlessly food-friendly gin that excels in a Gin & Tonic.

What to Pair It With

Bombay Sapphire’s bright, citrus-forward profile makes a lovely aperitif. Pair it with the Mediterranean Salad, a plate of Fresh Oysters, or our Heirloom Tomatoes & Burrata. See the full dine-in menu for more pairings.

How It’s Served at Grappa

At Grappa we pour Bombay Sapphire neat, over a large rock, or in a classic cocktail such as a Gin & Tonic or Martini, at $11.
