About the Distillery

The Dalmore has stood on the shores of the Cromarty Firth in the Scottish Highlands since 1839, its famous stag emblem a mark of one of Scotland’s most revered single malt houses. The distillery is celebrated for its mastery of cask maturation, drawing on long relationships with sherry bodegas to give its whiskies remarkable depth and a signature richness that suits Grappa’s elegant table.

Style & Region

This is a Highland single malt of real weight and structure. It is matured first in American white oak ex-bourbon barrels, then married with Matusalem oloroso sherry casks from Gonzalez Byass and Cabernet Sauvignon wine barriques. That layered cask work gives the whisky its hallmark concentration, body and warming spice, exactly the qualities that let it hold its own against rich food or, as its name suggests, a fine cigar.

Tasting Notes

The nose offers raisins, figs, dates and bright orange. The palate is generous and full, layered with festive spice, nutmeg and cinnamon, dark chocolate and a nutty depth that carries into a long, warming finish. It is a whisky made for unhurried sipping.

What to Pair It With

Its dried-fruit richness is a natural with our American Wagyu Steaks, the whisky’s spice echoing the beef’s marbled depth. For dessert, pair it with our Flourless Chocolate Cake. See more on the full dine-in menu.

How It’s Served at Grappa

We pour The Dalmore Cigar Malt Reserve neat at $45, letting its sherry-led richness unfold at its own pace. A few drops of water will lift its aromatics if you wish.
