Denizen Aged White Rum is a clear, clean-drinking Caribbean blend that hides a quiet secret: though it pours pale, it is built from rums that have already spent time in oak. At Grappa, we keep it close at hand on the bar, a versatile and honest white rum that brings real character to a cocktail. It is poured here in our Queen Anne dining room in Seattle.
About the Distillery
Denizen was created by a longtime spirits professional who wanted a white rum with more depth than the category usually allows. Rather than draw from a single house, the brand sources and marries rums from across the Caribbean, with a backbone of pot and column distillate from Trinidad and a measure of pot-still rum from Jamaica. The result is a blend assembled for balance and texture rather than for any one estate’s signature.
Style & Production
This is a molasses-based rum, drawn from sugarcane molasses fermented and distilled in the Caribbean. The component rums are aged in oak, then gently charcoal-filtered to strip the color while preserving the structure that the barrels gave them. What remains is technically an aged white rum: pale in the glass, but rounder and more complete than the typical un-aged style. The Trinidadian base lends smoothness, while the Jamaican pot-still portion adds a lift of fruit and funk.
Tasting Notes
Clean and bright on the nose, with hints of cane sugar, banana, and a whisper of vanilla from its time in wood. The palate is soft and approachable, carrying gentle tropical fruit, a touch of grassy cane, and a subtle dry spice underneath. The finish is crisp and tidy, with just enough weight to remind you it is more than a simple mixer.
What to Pair It With
Its clean fruit and gentle sweetness make it a lovely partner for Grappa’s Famous Paella and a thoughtfully arranged Charcuterie Board. It also lifts the richness of Mama’s Tiramisu. See the full dine-in menu for more pairings.

Denizen is a Caribbean blend, drawing on rums from Trinidad and Jamaica that are married together to create a balanced aged white rum.
What does it taste like?
It is clean and bright, with cane sugar, banana, and a whisper of vanilla, a soft tropical palate, and a crisp finish with a little more weight than a plain white rum.

The component rums are aged in oak and then charcoal-filtered to remove the color, which keeps the spirit pale while preserving the smoothness the barrels gave it.
