Flama D’Or House Cava is the traditional-method Spanish sparkling wine poured by the glass at Grappa in Seattle’s Queen Anne neighborhood. Made by Castell d’Or, whose cellars sit in the town of Vila-Rodona in Catalonia, it is our house bubbles for a reason: bright, dry, and endlessly food-friendly. We chose it because it brings real Cava character, fine bubbles and crisp fruit, to every table without ceremony.
About the Winery
Castell d’Or is a Catalan producer that crafts Cava in the heart of Spain’s sparkling-wine country. The Flama d’Or label is its traditional-method Cava, made in the same style that gives the region its reputation. The wine undergoes a second fermentation in the bottle and is aged before release, the classic approach behind Spain’s most famous sparkling wine.
Region & Grape
This Cava comes from Catalonia in northeastern Spain, with cellars in Vila-Rodona. Cava is built on indigenous Spanish grapes grown across the region’s limestone-influenced soils. The traditional method, second fermentation in the bottle, is what produces the fine, persistent bubbles that define the category.
Tasting Notes
Expect bright, tight bubbles and a clean, dry palate. The nose leads with green apple and citrus peel, and the wine carries that crisp citrus through a refreshing, lively finish. It is a dry brut style, vivacious and elegant, with a fine mousse that keeps it feeling light on the palate.
What to Pair It With
Cava loves salt and brightness. It is wonderful alongside our Fresh Oysters, the Heirloom Tomatoes & Burrata, or a Charcuterie Board. Explore more on the full dine-in menu.
