Fuji Japanese Whisky
Fuji Japanese Whisky

Fuji is an elegant Japanese whisky crafted at the foot of its namesake mountain, poured at Grappa in Queen Anne, Seattle. It is a graceful, beautifully composed pour that showcases the precision and patience for which Japanese whisky is celebrated.

About the Distillery

Fuji is made by Kirin at the Mt. Fuji Distillery in Gotemba, Japan, established in 1973. Set on the slopes of Mount Fuji, the distillery is blessed with cool air, frequent mountain fog, and pure spring water drawn from the mountain’s snowmelt, an ideal natural environment for slow, careful maturation. It is one of the rare distilleries in the world to produce both its own malt and grain whiskies on site, giving its blenders an exceptional palette to work from.

Style & Region

This is a Japanese whisky in the truest sense, distilled, matured, and brought together entirely at the Mt. Fuji Distillery. The house style favors clean, fruity elegance over heavy smoke, built around the distillery’s distinctive grain whiskies and its pot-still malt. The result is refined and harmonious, a whisky that prizes balance and finesse rather than weight or peat.

Tasting Notes

Expect a bright, fruit-forward character with notes of orange, ripe pear, and apple, layered over honey, vanilla, and soft caramel. There is a gentle floral lift and a creamy, rounded texture, with a clean, lingering finish touched by oak. It is a polished, supremely drinkable whisky that rewards quiet sipping.

What to Pair It With

Fuji’s orchard-fruit elegance makes it a lovely companion to a charcuterie board and our flourless chocolate cake, where its honeyed sweetness meets the richness of the dessert. It is equally at home alongside our American Wagyu steaks. Browse the full dine-in menu.
