High West Bourbon
High West Bourbon

High West Bourbon is a blended straight bourbon from the mountains of Park City, Utah, and it is poured at Grappa in Seattle’s Queen Anne neighborhood. We list it because it brings something a little different to the bar: a thoughtfully composed, Western-made bourbon with a refined balance of sweetness and spice that sits beautifully at the close of a Mediterranean meal.

About the Distillery

High West Distillery was founded in 2006 in Park City, Utah, earning recognition as the state’s first licensed distillery since the late 1800s. The house built its reputation as much on the art of blending as on distilling, selecting and marrying mature whiskeys to a consistent house style. Its bourbon, sometimes known as American Prairie, reflects that craft, and a portion of its proceeds has long supported land and wildlife conservation in the American West.

Style & Mash Bill

This is a blended straight bourbon: a marriage of two or more straight bourbons of differing ages, sourced and blended in Utah. The component whiskeys are corn-forward bourbons made with rye and malted barley as the secondary grains, giving the final blend a rounded, classic bourbon profile rather than a single-distillery signature. The aim of the blend is balance — depth from older whiskey, brightness from younger.

Tasting Notes

Expect a welcoming nose of vanilla, caramel and red fruit with a hint of oak. The palate is soft and approachable, with honey, baking spice and a gentle nuttiness leading to a clean, lightly peppery finish. It is an easygoing, elegant bourbon — polished enough to sip slowly and sociable enough to enjoy with food.

What to Pair It With

High West’s balanced sweetness flatters a range of our plates. Try it with our American Wagyu Steaks, where its caramel notes echo the seared beef, or with the Charcuterie Board for an easy, grazing pairing. For dessert, it sits gracefully beside our Flourless Chocolate Cake. See the full dine-in menu to plan your meal.
