The House Negroni is Grappa’s take on the classic Italian aperitivo, poured nightly in Seattle’s Queen Anne neighborhood. We build ours on barrel-aged gin and add a touch of amaro for extra depth, giving the timeless equal-parts cocktail a little more richness and backbone. It is mixed in-house and is one of the easiest ways to start an evening at our table.

What’s In It

Our House Negroni starts with Barrel-Aged Big Gin, a Seattle-made gin rested in wood for a softer, rounder character. To that we add Campari for its signature bitter-orange bite, Foro sweet vermouth for body and spice, and a touch of Sibona Amaro for added herbal depth. It is stirred over ice and served on the rocks with an orange garnish, in the traditional Negroni style.

At Grappa we keep that spirit but make it our own, choosing a barrel-aged gin and folding in a measure of amaro so the drink reads a touch deeper and more savory.
