Jacopo Poli Vespaiolo
Jacopo Poli Vespaiolo

Jacopo Poli Vespaiolo is a single-grape (monovitigno) grappa poured by the glass at Grappa in Seattle’s Queen Anne neighborhood. Distilled by the Poli family of the Veneto from the pomace of the aromatic Vespaiola grape, it is a graceful, fragrant digestif we are delighted to offer from our family to your table.

About the Distillery

Since 1898 the Poli family has run their artisanal grappa distillery near Bassano del Grappa, in the heart of the Veneto in northeastern Italy. Now in the hands of fourth-generation Jacopo Poli, the house has elevated grappa to an art form, distilling with patience and precision in traditional copper steam equipment. Poli is widely regarded as one of Italy’s most respected and characterful grappa producers.

Style & Production

This grappa is made from the pomace of Vespaiola, an aromatic white grape grown in the cool, volcanic hills of Breganze. Grappa is distilled from pomace, the skins, pulp and seeds left after the grapes are pressed for winemaking, rather than from wine. Poli distills the Vespaiola pomace in an antique copper steam boiler at low temperatures to preserve its delicate perfume, then rests the grappa in stainless steel before bottling so the aromas settle and harmonize.

Tasting Notes

This is a clear, expressive grappa with distinctive aromas of wisteria blossom, fig, red apple and honey. The volcanic Breganze terroir lends a freshness and floral lift, while the palate stays smooth and gently warming, finishing clean and perfumed. It is a refined, contemplative spirit made for sipping.

What to Pair It With

Its floral, honeyed character suits delicate sweets and after-dinner grazing. Try it with our Vanilla Bean Panna Cotta, a scoop of house gelato or sorbet, or a Charcuterie Board. Browse the full dine-in menu to plan the rest of your evening.

How It’s Served at Grappa

We pour Jacopo Poli Vespaiolo neat as a digestif, served at room temperature in a tulip glass so its blossom and fruit aromatics can open. It is offered at $35.
