Cachaça is Brazil’s national spirit, distilled from fresh-pressed sugarcane juice rather than molasses — a distinction that gives it a livelier, more vegetal personality than most rum. Novo Fogo Silver is made from freshly cut, organic cane pressed and fermented without delay, then distilled in a custom copper pot still. As an unaged “silver” expression, it is rested briefly in inert stainless steel to settle and soften before bottling, preserving its clean, transparent cane character.
