Pasquinet VSOP is a refined Cognac from southwestern France, a grape brandy drawn from the region’s most prized cru. We pour it at Grappa, our Italian and Mediterranean restaurant in Queen Anne, Seattle, as a quietly distinguished way to close an evening.
About the Producer
Pasquinet is a Cognac house with roots in the Grande Champagne cru, the region’s finest growing area, where it draws on an estate in the heart of the appellation. It is a smaller, less widely known name than the grand maisons, which makes it a rewarding discovery for guests who enjoy seeking out something beyond the familiar labels.
Style & Production
This is a grape brandy distilled chiefly from Ugni Blanc wine in the Cognac appellation, sourced from the Grande Champagne cru. It carries the official VSOP, or Very Superior Old Pale, designation and is matured in French oak, which gives the spirit its colour, roundness, and gentle spice.
Tasting Notes
Pale to medium amber in the glass, with aromas of dried fruit, vanilla, and toasted oak lifted by a floral edge. The palate is smooth and lively, balancing fruit and oak spice with a touch of honeyed sweetness, finishing clean and warming.
What to Pair It With
Its oak-and-honey warmth is a natural with our Flourless Chocolate Cake or a slice of Mama’s Tiramisu. The dried-fruit notes also pair well with our Charcuterie Board from the dine-in menu.
How It’s Served at Grappa
We serve it neat as a digestif, in a snifter, for $18.
