Pendleton is a smooth, easygoing blended Canadian whisky, and we are glad to pour it by the glass at Grappa in Queen Anne, Seattle. It is the kind of whisky that rewards an unhurried evening, equally at home before dinner or alongside a long, lingering table.
About the Distillery
Pendleton is the signature whisky of Hood River Distillers, the venerable Oregon house founded in the 1930s along the Columbia River Gorge. The brand draws its name and its spirited rodeo imagery from the historic Pendleton Round-Up, a celebration of cowboy and cowgirl grit. The whisky itself is blended and matured in Canada, then shipped to Oregon, where it is proofed with pure water sourced from nearby Mt. Hood before bottling, a Pacific Northwest finishing touch that gives the brand its local character.
Style & Mash Bill
Pendleton is a blended Canadian whisky built around a mix of grains, aged in charged oak. The style leans soft and approachable, with the gentle, rounded sweetness that Canadian blending is known for rather than the bigger, spicier shoulders of a high-rye American whiskey. The cool Mt. Hood water used in proofing is said to lend an extra measure of smoothness.
Tasting Notes
Expect a welcoming nose of vanilla and honey with a whisper of oak. The palate is mellow and lightly sweet, layered with butterscotch, baking spice and a soft caramel warmth. The finish is clean and gentle, easy to return to glass after glass.
What to Pair It With
The whisky’s caramel-and-vanilla sweetness loves savory, well-marbled fare. Try it beside our American Wagyu Steaks or our hearty Sicilian Meatballs, and let dessert lovers pour it next to the Flourless Chocolate Cake. See the full dine-in menu for more.
How It’s Served at Grappa
We pour Pendleton neat or over a single large rock at $11, however you like to take your whisky.
