Plantation Stiggins’ Fancy Pineapple Rum is a delightful original, a rum infused with real pineapple that revives a long-lost recipe and turns it into something genuinely special. It is more distinctive than your typical flavored rum, and a favorite among guests who like a little theater in their glass. At Grappa, we pour it in our Queen Anne dining room in Seattle.
About the Distillery
The rum comes from Plantation, the label of French house Maison Ferrand, working with renowned spirits writer and historian David Wondrich to recreate a nineteenth-century pineapple rum. The name nods to a character from Charles Dickens who was fond of pineapple rum, and the project pairs Maison Ferrand’s blending expertise with serious historical research. The result has become a modern bartending icon.
Style & Production
The base is molasses-based aged rum from Barbados. Prized Queen Victoria pineapples are used in two ways: the rinds are infused into the rum, while the fruit itself is separately macerated, and the two are then blended and rested in oak before bottling. This is therefore an aged, infused rum rather than a simple sweetened flavored spirit, and the layered preparation gives it a remarkably natural, fresh pineapple character with real rum depth beneath.
Tasting Notes
The nose bursts with ripe pineapple, candied citrus, and a hint of smoke and clove. The palate is rich and juicy, balancing bright tropical fruit against caramel, vanilla, and a savory edge from the infused rinds. The finish is long and complex, sweet pineapple giving way to warm spice and gentle oak.
What to Pair It With
Its bright pineapple and warm spice make it a joyful companion to our Flourless Chocolate Cake and the creamy sweetness of Mama’s Tiramisu. It is also a fun foil to a savory Charcuterie Board. See the full dine-in menu for more pairings.
