Puni Italian Sole is a sherry-finished single malt from Puni, Italy’s first malt whisky distillery, and it is poured at Grappa in Seattle’s Queen Anne neighborhood. Sole, the Italian word for sun, is the warmest and most generous expression in the family’s core range: an alpine single malt rounded out with sweet Andalusian sherry. It is a fitting Italian whisky for an Italian table.
About the Distillery
Puni was founded by the Ebensperger family in Glorenza, in the Val Venosta of Alto Adige, in the far north of Italy. The country’s pioneering single malt distillery takes its name from the Puni river that flows through the valley. In the dry, alpine climate of South Tyrol, with warm summers and freezing winters, the spirit works deep into the wood, building richness and complexity beyond its years.
Style & Region
This is an Italian single malt from Alto Adige, first matured in ex-bourbon casks and then finished in Pedro Ximenez sherry casks from Spain. There is no peat; the character comes from the interplay of bright bourbon-cask malt and the dark, raisined sweetness of PX sherry. The result is warm and honeyed, a sun-soaked counterpoint to the alpine origins of the spirit.
Tasting Notes
Expect a nose of wild honey, blood orange and toasted oak, with a sweet sherried depth beneath. The palate is rich and rounded, offering honey, dried fruit, marmalade and a gentle oak spice from the PX finish. The finish is long, warm and softly sweet, the sherry influence lingering without ever turning heavy, an elegant, comforting pour.
What to Pair It With
The honeyed sherry character of the Sole is a natural match for our Flourless Chocolate Cake, where dried fruit meets dark cocoa, and for our Charcuterie Board, the sweetness playing against cured meats and aged cheese. It also complements the marbled richness of our American Wagyu Steaks. Browse the full dine-in menu to build your evening.
