About the Distillery

Quechol is a small, terroir-driven sotol project that honors the traditions of Mexico’s northern desert. This bottling, named for the Dasylirion wheeleri plant, is distilled from wild-harvested desert spoon sourced from the Chihuahuan Desert in Durango. The plants are gathered by hand from rugged, remote terrain, an artisanal practice that gives each release its sense of place. Quechol is a relatively obscure, specialist label, so it may be unfamiliar even to seasoned agave-spirit drinkers, which is part of its appeal.

Agave & Region

Here is the important distinction: sotol is not made from agave at all. While tequila and mezcal come from agave, sotol is distilled from the Dasylirion plant, commonly called desert spoon or sotol, a flowering plant in the asparagus family native to the arid highlands of northern Mexico and the southwestern United States. Sotol is the regional drink of Chihuahua, Durango, and Coahuila. This particular bottling uses wild Dasylirion wheeleri, plants that grow slowly over many years in harsh desert conditions, with their inner cores fermented and distilled to make the spirit.

Tasting Notes

Wild sotol tends to carry the signature of the desert that raised it, herbaceous and green, with notes of dry grass, mineral earth, and a touch of bright vegetal freshness.
