Ransom Dry Gin is a characterful, old-world style gin from Ransom Spirits in Sheridan, Oregon, and it is poured at Grappa in Seattle’s Queen Anne neighborhood. We love this one for its artisan, farmhouse soul — a gin with more body and grain character than the crisp, clean style most people expect.
About the Distillery
Ransom Spirits has crafted small-batch spirits in Oregon’s Willamette Valley since 1997, farming, milling and distilling on-site. The house is known for reviving historic spirit styles, often working with cocktail historian David Wondrich, and for running its botanical-infused spirit through a traditional alembic pot still to preserve the fullest aromatics and body. The result is a gin made with an old-world, hand-crafted sensibility.
Botanicals & Style
The organic botanical bill is classic and citrus-bright: juniper, orange peel, lemon peel, coriander seed, cardamom pods and angelica root. What sets Ransom apart is its base — a malted barley wort infused with botanicals in high-proof corn spirit, which lends a subtle, bready maltiness. The style leans richer and more textured than a standard dry gin, with a gentle grain warmth supporting the juniper and citrus, evoking the old-world gins of an earlier era.
Tasting Notes
Expect a nose of juniper, fresh orange and lemon peel with a hint of malt. The palate is full and rounded, with citrus, coriander and cardamom over a soft, bready base. The finish is warm, spiced and lingering.
What to Pair It With
Its rounded, malty body stands up beautifully to our Spaniard Octopus and pairs warmly with Our Hummus. It is also lovely beside the Heirloom Tomatoes & Burrata. Explore the full dine-in menu to round out your evening.
How It’s Served at Grappa
