It is made by SennzaFinne, the small Pacific Northwest amaro label founded by Seattle bar professionals Joey and Gillian Diedrick. About the Producer

SennzaFinne was started by husband-and-wife bartenders Joey and Gillian Diedrick, who fell in love with amaro during travels through Italy and began developing their own recipes at a small facility near Seattle. The project is built on the classic amaro tradition but rooted in the Pacific Northwest, using a mix of exotic and local botanicals. Where many of their amari follow the seasons, "Always" is the one they keep on year-round — their signature, everyday expression.

Style & Production

"Always" is a small-batch amaro made by macerating and blending botanicals, among them hibiscus, sarsaparilla, lemongrass and ginger, into a bittersweet whole. The makers describe it as deep, dark and lush, in keeping with the traditional Italian amaro style they set out to honor. It is bottled at 35% ABV. Built to be versatile, it works neat over ice, lengthened with tonic or sparkling water, or stirred into cocktails alongside agave spirits, rum or cachaça.

Tasting Notes

The nose carries hibiscus and lemongrass over warm ginger and root spice. The palate is bittersweet and lush, layering dark herbal notes and a tart floral lift against a gentle sweetness. The finish is long and persistent, herbal and gently bitter — an amaro that rewards slow sipping by candlelight.
