SennzaFinne Winter Amaro
SennzaFinne Winter Amaro

SennzaFinne Winter is a seasonal American amaro — a bittersweet, herb-infused digestif — and it is poured at Grappa in Seattle’s Queen Anne neighborhood. It is made by SennzaFinne, the small Pacific Northwest amaro label founded by Seattle bar professionals Joey and Gillian Diedrick, as their cold-weather expression. We list it because it is a local cousin to the great Italian amari we love: a richer, darker amaro built for short grey Northwest winters, all roots, toasted nuts and coffee.

About the Producer

SennzaFinne was founded by husband-and-wife bartenders Joey and Gillian Diedrick, who discovered amaro while traveling in Italy and went on to develop their own recipes at a small facility near Seattle. Their amari follow the seasons, each one composed to suit a moment in the Pacific Northwest year. The Winter release — named "Rustling Wood" — is their answer to the dormant season, reaching for deeper, more warming flavors.

Style & Production

The Winter amaro is a small-batch maceration and blend of botanicals that digs into roots, spices and toasted hazelnuts, with coffee woven through to lift the short, grey days of a Northwest winter. The makers describe it as rich, nutty and sultry, a robust expression that even carries a faint smokiness. It is bottled at 37% ABV and suits sipping neat, served over ice, or paired with Scotch and other contemplative sipping spirits.

Tasting Notes

The nose is deep and roasty, with toasted hazelnut, coffee and warm baking spice over an earthy root base. The palate is rich and bittersweet, layering nutty and chocolatey notes, chicory and cedar, with a sultry, faintly smoky undertone. The finish is long and warming, gently bitter and built for cold evenings.

What to Pair It With

As a digestif, it is made for the close of a winter meal. Sip it after Flourless Chocolate Cake, alongside Mama’s Tiramisu, or with the Charcuterie Board. See the full dine-in menu for more.

How It’s Served at Grappa
