Tosolini Cividina is a young white grappa (Grappa Bianca) we pour by the glass at Grappa, our Italian and Mediterranean table in Seattle’s Queen Anne neighborhood. Crafted by the celebrated Bepi Tosolini house of Friuli, it earns its place on our after-dinner list for the way it carries the bright, floral spirit of northeastern Italy straight to your candlelit table.
About the Distillery
Bepi Tosolini founded his distillery on a simple family tradition of honest grappa-making, and the house remains rooted in Marsure di Povoletto, near Udine in the Friuli region. Over the decades the family built one of Italy’s most respected grappa cellars, and they continue to age and bottle their distillates following techniques passed from one generation to the next. It is the kind of family-to-table craftsmanship we love to share.
Style & Production
Cividina is a clear, unaged grappa made from a varietal marc of mixed Friulian grapes. It is produced according to the Tosolini method, distilled in small batches using manually operated, artisanal steam stills that protect the freshness and delicacy of the marc. Because it is bottled young and never rested in wood, it stays bright and transparent in the glass, showing the pure character of the grapes rather than the influence of a barrel.
Tasting Notes
The aroma is fresh and floral, with the orchard-fruit and blossom notes typical of fine Friulian wines. On the palate it is clean, fruity and well balanced, with a gentle whisper of blanched almond. The finish is lively and warming, lifted by a touch of black-pepper spice that lingers softly and invites another sip.
What to Pair It With
As a digestif, Cividina shines after the meal. Pour it alongside Mama’s Tiramisu, a slice of Flourless Chocolate Cake, or a silky Vanilla Bean Panna Cotta. Explore more sweet and savory companions on our full dine-in menu.
How It’s Served at Grappa
We serve Tosolini Cividina as a digestif, poured straight in a tulip glass at a gentle cellar-warm temperature so its aromatics open fully. The pour is $11, a graceful way to close an evening at our table.
