Westland is an American single malt whiskey distilled right here in Seattle, and it is poured at Grappa in the Queen Anne neighborhood. It is a point of local pride for us: a single malt born of the Pacific Northwest, made just across town, that brings a sense of place to the glass in a way few spirits can.
About the Distillery
Westland Distillery was founded in Seattle with a singular ambition — to prove that the Pacific Northwest could produce a world-class single malt of its own character. The team built their house style around the region: barley grown in the nearby Skagit Valley, a generous use of roasted and specialty malts, and a thoughtful, wide-ranging cask program. The result helped define American single malt as a serious category, and it remains one of Seattle’s most celebrated craft producers.
Style & Region
This is an American single malt — made entirely from malted barley at a single distillery — rather than a blend. Westland leans into Pacific Northwest terroir, drawing on regionally grown barley and a layered malt bill that gives the whiskey its signature depth. Maturation spans new American oak, ex-bourbon and ex-sherry casks, with only the gentlest whisper of peat woven in for balance. It is rich and characterful without ever turning heavy or smoky.
Tasting Notes
Expect an inviting nose of vanilla, toasted grain, dried fruit and a hint of cocoa. The palate is warm and rounded, with notes of caramel, baked bread, ripe orchard fruit and a touch of nutty oak. The finish is long and softly sweet, carrying a gentle malty warmth that makes it wonderfully easy to linger over.
What to Pair It With
Westland’s malty richness loves a generous spread. It is a natural beside our Charcuterie Board, the cured meats playing off its nutty depth, and it stands up beautifully to our American Wagyu Steaks. For a sweeter close, pour it alongside the Flourless Chocolate Cake. Browse the full dine-in menu to plan the evening.
