Baardseth VSOP
Baardseth VSOP

Baardseth VSOP is a Fine Champagne Cognac, a graceful French brandy that closes an evening at Grappa with quiet sophistication. Mellow, rounded and softly aromatic, it is the kind of digestif that rewards an unhurried final hour at the table.

About the Producer

Baardseth is a small, independently labeled Cognac brand drawn from the heart of the Cognac region in southwest France. As a more boutique name, it does not carry the household recognition of the grandes maisons, yet its Fine Champagne designation signals serious provenance: the blend is built from the two most prized crus of the region, Grande Champagne and Petite Champagne. The result reflects a measured, traditional approach rather than mass production.

Style & Production

Cognac is twice distilled in copper pot stills from white wine, chiefly the Ugni Blanc grape, then matured in French oak. VSOP, meaning Very Superior Old Pale, is an official Cognac designation marking eaux-de-vie aged a meaningful step beyond the entry tier, long enough for the oak to round the spirit and lend colour and depth. The Fine Champagne label confirms the blend is composed solely of Grande and Petite Champagne eaux-de-vie, the chalky crus prized for finesse and longevity.

Tasting Notes

Expect a fragrant nose of dried apricot, orange peel and ripe grape, layered with gentle toasted oak. The palate is smooth and lightly sweet, carrying crystallised fruit, vanilla and a soft pastry warmth. The finish is long and composed, leaving a trace of fruit and barrel spice that lingers pleasantly.

What to Pair It With

This Cognac is a natural companion to dessert. Pour it alongside our Flourless Chocolate Cake for a rich, indulgent finish, or with Mama’s Tiramisu, whose coffee and mascarpone echo its vanilla warmth. For something lighter, the Vanilla Bean Panna Cotta is a delicate match. See the full dine-in menu for more.

How It’s Served at Grappa

We pour Baardseth VSOP neat as a digestif, served in a tulip glass to gather its aromatics, at $18.
