Michter’s Bomberger’s Declaration Small Batch Bourbon
Michter’s Bomberger’s Declaration Small Batch Bourbon

Michter’s Bomberger’s Declaration is a prestigious, limited small-batch bourbon poured at Grappa in Queen Anne, Seattle — a benchmark of refined American whiskey.

About the Distillery

Bomberger’s Declaration is part of Michter’s acclaimed lineup, distilled and bottled at Michter’s in Louisville, Kentucky. The name honors Abraham Bomberger, whose nineteenth-century distillery in Schaefferstown, Pennsylvania became the original Michter’s. Released annually in small quantities, it is among the most coveted bourbons the house produces.

Style & Mash Bill

This is a Kentucky straight bourbon made in small batches. Michter’s keeps the precise grain proportions private, but it is a corn-forward bourbon, with certain releases incorporating malted rye for added spice. What truly sets it apart is the wood: it is matured in barrels built from Chinquapin oak, air-dried and seasoned for years, then carefully toasted and charred to draw out a deep, distinctive oak signature.

Tasting Notes

Polished and full: caramel, vanilla, and honeyed corn sweetness layered with rich toasted oak, baking spice, dark fruit, and a touch of cocoa. The Chinquapin oak lends a rounded, resonant depth, finishing long and warming.

What to Pair It With

Its oak-driven depth is superb with our American Wagyu Steaks and stands up to the savory Sicilian Meatballs. To finish, pair it with our Flourless Chocolate Cake. Browse the full dine-in menu for more.

How It’s Served at Grappa
