Don Fulano Anejo is a connoisseur’s tequila, elegant and quietly complex, and a natural fit for an evening at Grappa, our Mediterranean restaurant in Queen Anne. Refined oak and estate-grown highland agave make it a spirit to linger over.
About the Distillery
Don Fulano is the work of the Fonseca family, whose roots in agave farming reach back generations in the highlands of Jalisco. Today they cultivate their own estate agave and produce the spirit at the respected La Tequileqa distillery, a house known for craftsmanship and precision. The result is a tequila that balances heritage with a modern, polished hand.
Agave & Region
This anejo is made from estate-grown blue agave in Los Altos, the highland region of Jalisco. The high elevation, iron-rich red soil, and cool nights yield agave that is fuller and more floral, giving the spirit a graceful, aromatic backbone. Growing their own agave lets the family guide quality from the field forward.
Tasting Notes
Patient aging in refined French oak brings layered notes of dried fruit, vanilla, and toasted almond over cooked agave. Subtle spice, a thread of citrus, and a silky texture lead to a long, composed finish. It is sophisticated and beautifully integrated.
What to Pair It With
Its refined depth flatters the smoky char of our Spaniard Octopus and the saffron richness of Grappa’s Famous Paella. It also stands up gracefully to the Spicy Sausage Rigatoni. Explore more on the full dine-in menu.
How It’s Served at Grappa
Don Fulano Anejo is poured neat for sipping or in a cocktail, served at $25.
