About the Distillery
Don Fulano is the work of the Fonseca family, whose roots in tequila run deep, with agave cultivation in the Jalisco highlands stretching back generations. The family eventually chose to produce their own estate tequila, and Don Fulano reflects that heritage and patience. The reposado is rested in both new and used French oak, a thoughtful choice that adds structure without overwhelming the agave.
Agave & Region
Don Fulano is built on estate-grown Blue Weber agave from Los Altos, the highlands of Jalisco, Mexico, where the Fonseca family has farmed for well over a century. Highland agave tends to be fuller and sweeter, and here it is allowed to fully mature before harvest. As a reposado, the spirit rests in French oak, which gently rounds the agave and weaves in soft barrel character.
Tasting Notes
The nose offers French oak alongside vanilla bean, dark chocolate, and baking spice, with dried herbs and grass lending a delicate, ethereal lift. The palate is round and generous, with coconut and macadamia giving way to sweet prune, cooked agave, and a mature fruit-compote richness in the mid-palate. It is elegant, layered, and beautifully composed.
