Poli Po’ di Poli Secca (Dry)
Poli Po’ di Poli Secca (Dry)

Poli Po’ di Poli Secca, the dry expression, is a single-grape grappa we are glad to pour at Grappa in Seattle’s Queen Anne neighborhood. Made by Poli Distillerie in Schiavon, near Bassano del Grappa in the Veneto, it is a clean, white-style grappa for those who prefer a drier, more savory digestif. We list it because it offers a beautifully composed counterpoint to our sweeter pours, from our family to your table.

About the Distillery

The Poli family distillery has been active since 1898 in Schiavon, in the heart of the Veneto, a region long renowned for grape-marc distillation. Still family-run, Poli is one of Italy’s most respected grappa houses, distilling in small artisanal lots and treating each grape variety with great care.

Style & Production

This monovitigno grappa is distilled from Merlot pomace and belongs to Poli’s line of clear, white grappas. Grappa is made by distilling the skins, seeds and stems left after winemaking; here Poli distills in small artisanal batches, then rests the spirit in stainless steel so it stays bright, clean and dry in style.

Tasting Notes

The nose is delicate and savory, with fresh-cut grass, soft floral notes and a hint of bitter almond. The palate is vigorous and dry with long persistence, the warmth filling the mouth with aromatic nuance rather than harshness.

What to Pair It With

Its dry, structured character suits richer finishes. Enjoy it with the Charcuterie Board, alongside the Flourless Chocolate Cake, or as a digestif after one of our American Wagyu steaks. Browse the full dine-in menu to plan the rest of your meal.
