Woodinville Straight Bourbon Aged 9 Years is a limited, anniversary-era Washington bourbon poured at Grappa in Queen Anne, Seattle — a deeply matured pour from just outside our city.
About the Distillery
Woodinville Whiskey Co. was founded in 2010 in Woodinville, Washington, and is one of the Pacific Northwest’s most respected distilleries. Its grain comes from a single family farm in Central Washington, and the spirit matures in the region’s dramatic seasonal swings, which intensify the exchange between whiskey and oak. This nine-year release continues the distillery’s run of extra-aged limited bottlings.
Style & Mash Bill
This is a limited-release Washington straight bourbon aged nine years, built on a higher-rye mash bill — higher in rye than the distillery’s flagship. It is aged in heavily toasted, lightly charred barrels made from staves seasoned outdoors for two years, and each bottle of this small release is individually numbered.
Tasting Notes
The extra year of maturation deepens an already rich profile: caramel, vanilla, and toffee meet robust toasted oak, dark baking spice, dried fruit, and the peppery lift of the higher-rye recipe. Full-bodied and rounded, with a long, warming finish.
What to Pair It With
Its concentrated oak and spice are made for our American Wagyu Steaks and the savory Sicilian Meatballs. To close, enjoy it with our Flourless Chocolate Cake. See the full dine-in menu for more.
How It’s Served at Grappa
Poured neat or on the rocks at $40. As a limited extra-aged release, we recommend it neat, with ice on request.
